Mimosa
Sensitive plants are one of the most unusual plants grown. Its fern-like leaves are a decorative, delicate green and although it has small lavender flowers, it is grown (both indoors and out) because of its ability to fold up upon being touched. Leaves fold together and stems fold down as shown in the animation. Recovery is prompt and the action can be repeated many times without harm. The leaves fold up at night as if taking a much needed rest.
